THE INFO: Because I can not stop going to the Rexburg Farmers Market I have installed another favorite from the market and probably one of the biggest hits. Costumbres is a drink truck if that makes since. They offer a variety of different Spanish inspired lemonades with the freshest fruits all placed into the prettiest bowls and hand spooned onto fresh ice. Seriously amazing. They also offer a variety of small cookies and take both card and cash so don't even hesitate the next time you are strolling by. They are only open as far as I know at the Farmers Market, open from 4-8 pm on Friday night in the summer on south college avenue near the Spori building. 

WHAT I GOT: My go to favorites are the mango, strawberry, and peach lemonade. I love that they offer you samples of each kind so do not be shy, they want you to get the one you love the most.

THE INFO: You may have seen my post a few months back about the very beautiful and breathtaking Upper Mesa Falls. Like I mentioned in that post this is one of the most breathtaking sites in eastern Idaho. I have normally spent most of my time driving right past the lower falls lookout and driving straight towards the upper falls. However this time we decided to just go and see the lower falls and it was well worth it. The place is covered in rich evergreen and pine trees and they seem to go on forever. The view and the hiking trails that surround this area provide hours of outdoor enjoyment. 

WHAT TO DO: Like I mentioned in my last post about the falls, my favorite time to go a few hours before sunset, most of the tourist have diminished and you have the whole place to yourself and your group. It is so much more quiet in those moments and that just adds so much to the whole scenery. I always bring my camera and take some really beautiful shots of my friends with the trees and I recommend that everyone grabs a photo like that while they are here in the northwest. Bring blankets and snacks and hike down towards the river (this hike can be found at the first pull off with a bathroom), the first hike it a little hidden through really high brush but once you make it through that you will have a straight shot down into the canyon with some refreshing views of mother nature.

THE INFO: Somewhat underrated but seriously the best in the ice cream business in Rexburg, G's Dairy has been a long time favorite of mine. G's Dairy prides themselves on being the top quality dairy products at an affordable price. And quality with affordability is something they really offer. Their location is a store and restaurant packed into one. With locally made diary products and other smaller grocery items. But the epic winner of G's is their ice cream and their waffle cones, while they do offer a menu of substantial foods including sandwiches and soup. I continue to come back to their ice cream. 

WHAT I GOT: They are extremely generous with their servings and it makes since on the cost of their ice cream. I always get a waffle cone with one scoop of cookie monster and I always seem to be putting more than half in the freezer to finish at another time. Their ice cream is creamy and heavenly and everything an ice cream lover wants. This spot also offers a really cute store with adorable seating and even a drive through window.

THE INFO: You may have already noticed the castle on top pf the hill in Rexburg. The Church of Jesus Christ of Latter Day Saints, beautiful Temple. I love being able to go see this beautiful place and I love the reminder it holds so dear for me. I love to go and see different views of the temple throughout Rexburg and I thought that I would share one of my secret spots with everyone so you can also go experience the beauty of this temple. 

WHAT TO DO: When the clouds are doing something ridiculously beautiful or the sunset is blowing my mind I drive the road right past the temple next to the ricks and go all the way up to the end of the hill and watch and take this beautiful place all in.

THE INFO: World's Best Corndogs may seem to be a ver exaggerated name for the new food truck arrival to Rexburg. However after trying a half size, I am sold on the quality and taste of the corn dogs. I especially like how they describe their corn dogs on their they said, "All of your wildest dreams will come true as you sink your teeth into a crispy, golden, delicious dog o' joy." If that doesn't make you want some fried perfection than I don't know what will. 

WHAT I GOT: I have gotten both the Foot long and half size and I really think they both are amazing especially with their honey sauce on top. The size just depends on your appetite. I would love to see this place expand and offer some more fair like foods; fresh lemonade and some tator-tots!

THE INFO: In the need for a serious burst of the northwest? Harriman State Park is one of my favorite places to be close to nature and also be close to home. Just a little over an hour away from Rexburg Harriman State Park offers a variety of different activities including hiking (fairly easy), bird watching, horse back riding, camping and even in their awesome yurts. However in the winter I recommend this area for cross country skiing and even just some awesome winter wonderland photographs because they keep the park pretty cleared in the thick snow. 

WHAT TO DO: I have come here many times and most of those times were in the winter. It is great for exploring and even if you don't have skis or snow shoes. Tons and when I say tons I mean potentially several hundred swans are their and its completely breathtaking. However this is a fairly safe place to go hiking and take in the breathtaking snake river.

THE INFO: Farmers markets and me are like really close friends. I swear there is something about the endless samples, summer heat, and every member of the community on one little street. The Rexburg Farmers Market is so wonderful because first it is only one on Friday evenings and second they offer some seriously awesome street food. The market is right off of campus near the Spori building right off main street. Open on Friday night from 4 to 8 pm in the summer and runs through October 16, this year and is a Rexburg must. 

WHAT I GOT: Whenever I go I always get the Mexican Corn and the mango lemonade. The best parts is you do not need to worry about bringing cash with you as most venders take card. Score!

THE INFO: SodaVine opened its doors in 2013 and has fast become a favorite in Rexburg. The company was brainstormed up by the owners of another Rexburg hotspot, SnoAsis. With a wide variety of drinks, snacks, and Italian ice, Soda Vine is there to carve any snack craving at super low prices. 

WHAT I GOT: My favorite is the Dirty Dr. Pepper, which consist of pebble ice, Dr. Pepper, fresh lime juice, and coconut syrup. Along with my drink I love their sugar cookies and pretzels.

THE INFO: Rigby Lake, is seriously the best place to go swimming around Rexburg. This place is not only very family friendly and not sketchy like other swimming spots, but has sand covered beaches which add to the beach like appeal of the whole experience. Rigby Lake opens in the summer and is 5 dollars (cash only) per car to get in. Spend hours relaxing in the clean water or spice it up with paddle boarding or jumping and sliding off the docks scattered throughout the lake. 

WHAT TO DO: SWIM! Rexburg can be hot in the summer, especially when your apartment has no AC, and that is a topic of its self. But I digress  Prepare to get your tan on and bring a bunch of friends, or your FHE family like I did! Otter Pops are a must as well.
